White wheat is not the same as refined or bleached white flour. The color refers to the color of the kernel, not the amount of processing it receives.

White wheats are whole grain. The entire grain—from bran to germ—is in included in your flour. You're getting the most nutrition possible!

White wheat flour is easy to bake with. You don't have to be an expert baker to be able to master using white wheat flour. It bakes like refined white flour!

Which White Wheat for What?

Hard White Wheat

  • Moderate gluten makes for melt-in-your-mouth soft loaves and rolls
  • Great for bread and other goods that need to rise.
  • Great for torillas, pizza dough and other baked goods that need to be stretched
  • Yields a baked good that is both light in texture and color with all the nutrition of whole wheat.

Soft White Wheat

  • Less gluten means fewer worries about tough biscuits, pie dough and hockey-puck waffles.
  • Great for pie dough, cookies and cakes. We call it pastry flour for a reason!
  • Yields a light in color confection with whole grain nutrition
  • Not recommended for bread or creations that need to rise. The lower gluten content in this flour will not allow your bread to rise as well as with hard wheat flours.
